Rocky Road Brownies

Another recipe from my mom. Easy, but a few steps involved. And oh so yummy!  You can't beat recipes from mommy's. 

Brownie Base:
½ cup butter or margarine
1 sq unsweetened chocolate or 4 tbsp cocoa powder plus one additional tbsp margarine/butter.
1 cup sugar
1 cup unsifted flour
½ cup chopped nuts (optional)
1 tsp baking powder
1 tsp vanilla
2 eggs
(For high altitude: I use about 3-4 tbsp less sugar, 1 tbsp extra flour, and 1 tbsp water to the brownie base.)

In a saucepan (at least 2 quart size), melt butter and chocolate over low heat; remove from heat. Add sugar, flour, nuts, baking powder, vanilla, and eggs; mix well.

Spread in greased and floured 9x13 inch pan.

6 oz. Cream cheese, softened
½ cup sugar
2 tbsp flour
¼ cup butter or margarine, softened
1 egg
½ tsp vanilla
¼ cup chopped nuts (optional)
1 cup chocolate chips

In a bowl, mix together the filling ingredients except the chocolate chips and nuts; spread over chocolate mixture in the pan.

Sprinkle the chocolate chips and nuts on top of the filling. Bake at 350 degrees F for 25 to 30 minutes or until a tooth pick inserted in center comes out clean. (Don’t stick it in a chocolate chip!)

Sprinkle with 2 cups miniature marshmallows and bake 2 minutes longer.

Have frosting ready to spread over top of the softened marshmallows.
¼ cup butter or margarine
1 square unsweetened chocolate or 3 tbsp cocoa powder
2 oz. Cream cheese
¼ cup milk
1 lb. (about 3 cups) powdered sugar
1 tsp vanilla

Combine butter, chocolate, cream cheese, and milk in saucepan. Heat over low heat until chocolate and butter melt. Stir in powdered sugar and vanilla until smooth.

Pour over marshmallows and swirl together.

Cool and cut into bars. Best stored in refrigerator when not out for eating.
