Pumpkin Oatmeal Cookies

Mmmmmm....we love some pumpkin here. Pumpkin stuff all year long, not just during autumn. Biker Boy especially loves pumpkin. He'll eat almost anything with pumpkin in it. Except pumpkin soup, I still haven't found a recipe that appeals to us yet. But oh....pumpkin cookies are what we have been munching on lately. Yummy, gooey, warm, soft cookies right out of the oven! Yum! I took a Pumpkin-Oatmeal Raisin recipe from Libby's and modified it.

This will work well for those of you at altitude and it should work for those of you who aren't. I added some more flour, a little water, and less sugar because I live at altitude. And we put in chocolate chips and a few extra spices. (And when I say we....I mean the kiddos were my little helpers and taste-testers.) Yum! I think next time I might add a little more oatmeal. Oh, I also put in about 4 tablespoons flax seed, which isn't in the recipe below. Can I call the cookies healthy now?
